  • 1/4 cup (30g) cocoa powder
  • Pinch of salt
  • 180g/6oz dark chocolate block/bar (optional) , chopped into chunks rather than shards, (bittersweet or semi-sweet, cooking chocolate)

  1. Preheat oven to 180°C/350°F (160°C fan forced).
  2. Spray oil on a 20cm/8″ square tin and line it with baking or parchment paper that hangs over the sides (Note 2).
  3. In a bowl that can handle heat, melt the chocolate chips and butter in 30 second bursts (it takes me 1 minute and 30 seconds). Mix until it’s smooth.
  4. Mix in the sugar and vanilla. Next, add the eggs and mix well until the mixture is smooth and melted.
  5. Mix in the salt, cocoa, and flour until the mixture is smooth. Add the chopped chocolate and mix it in. Then pour the mixture into the pan.

  7. Cut the cooking time by 2 minutes if you didn’t use the extra chocolate to stir it in.
  8. Let it sit for 10 minutes before taking it out of the pan. Let it cool down for 20 minutes or more before cutting it. Keep in a jar that keeps air out for four days (I bet they don’t last that long!) or put it in the freezer for three months.
