Gordon Ramsay Banana Cream Pie

Gordon Ramsay’s banana cream pie recipe is simple and can be made with or without packaged pudding, depending on your preference. It tastes great with chocolate curls, toasted coconut, or nothing at all. It’s the Christmas season, and this dessert is just what the doctor ordered!

It’s got a peanut butter cookie crust and is quite creamy and sweet. This year, make an impressive dessert that will leave your visitors wanting more.

What Is Banana Cream Pie?

If you’ve never tried banana cream pie before, prepare to fall in love. The banana cream pie consists of sliced fresh bananas, a rich vanilla pudding or custard, and whipped topping.

Although the list of ingredients for a banana cream pie might seem long, it’s actually rather easy to put together. You’ll require:

  • For the filling: Whole milk (or 2% milk), egg yolks, granulated sugar, cornstarch for thickening, salt, bourbon or scotch (not required, but wonderful), vanilla essence, and butter go into making the vanilla custard filling. You’ll also need sliced fresh bananas for the base.
  • For the crust: Nutter Butters and a bit of melted butter make up the base of my signature peanut butter cookie crust. Simple as that!
  • For the topping: Have to have some freshly whipped cream. Ingredients include confectioners’ sugar, vanilla, and heavy cream.
  • To garnish: Adding lovely chocolate curls made from a dark chocolate bar is one of my favorite ways to personalize a pie, but there are plenty of other options down below as well.

Make It With Different Types Of Crust

There are several ways to make a crust, but my personal favorite is the peanut butter cookie crust (alleluia, peanut butter fans).

If you like a more classic banana cream pie, by all means, use regular pie dough, such as my homemade all-butter pie crust. Since you won’t be finishing the pie in the oven once you add the filling, blind baking the crust is a must (like an apple or pumpkin pie).
Use a different kind of cookie to make a cookie crust with a varied flavor. Crust ingredients for banana cream pie could include Oreos, vanilla wafers, and graham crackers.

How To Make Gordon Ramsay Banana Cream Pie

  • Preheat the oven to 350 degrees Fahrenheit. Use nonstick cooking spray or melted butter to grease a 9-inch springform pan. This makes a stunning pie, but you can also make it in a conventional deep dish pie plate!
  • Start by making the crust: Place cookies in a food processor bowl and pulse for 1-2 minutes, or until coarsely smashed. Process again until well blended with the melted butter.
  • Fill the prepared pie pan halfway with the mixture and press evenly into the bottom and sides. On the sides, it should rise at least an inch to an inch and a half. To help set the crust firmly and get the crumbs up the side of the pan, I sometimes use a tiny measuring cup.
  • Bake for 10 minutes, then remove from the oven and cool on a wire rack.
  • To make the filling: In a large saucepan, whisk together the yolks, sugar, cornstarch, and salt until smooth and thick. It may take some time to incorporate everything, but the end result should be silky smooth.
  • Next, heat the milk in a small saucepan to a gentle simmer. The milk should not be boiled. You just want it to start bubbling and simmering around the edges.
  • Once simmering, remove from heat and quickly whisk in 1/3 cups of the hot milk into the egg mixture, continuing to whisk as we don’t want the eggs to curdle! You must act quickly. Continue to whisk as you slowly add the balance of the boiling milk.
  • When all of the milk has been whisked into the pan with the egg mixture, immediately place the pan over medium heat and continue to whisk, being sure to get all of the sides and edges.
  • When the mixture begins to reheat and gently boil, it can thicken VERY quickly, so keep an eye on it. When the mixture thickens to the consistency of custard or thick peanut butter (which shouldn’t take long), remove from the heat and stir in the vanilla extract, bourbon, and butter until well incorporated.
  • Next, arrange the banana slices on the bottom of the pie crust so that they are touching. Smooth the top of the cooled cookie pie shell with the filling. Refrigerate for 2-4 hours, or until the filling is cold, covered with plastic wrap.
  • When the pie and filling are cool enough to serve, make the whipped cream topping: In a mixing bowl, combine the heavy whipped cream, powdered sugar, and vanilla extract; whisk on high until the cream forms stiff peaks. Taste and, if necessary, add more sugar before mixing again.
  • Spread whipped cream evenly over pie filling, then decorate with dark chocolate shavings or dust with cocoa powder. Depending on the size of the slices, this recipe serves 9-12 people. If properly covered and stored in the fridge, the pie will keep for a few days.

How To Store Banana Cream Pie?

Banana cream pie can be kept in the refrigerator for up to 4 days if the leftovers are loosely covered with plastic wrap or foil.

How To Make Banana Cream Pie Ahead?

Banana cream pie can be made in its entirety or in its crust and filling separately, saving you time on the actual day of celebrations.

  • To make pie crust ahead of time: Assemble the pie and chill it in the fridge after baking the crust, but before adding the filling.
  • To make filling ahead of time: When you’re ready to assemble the pie, chill the filling in the fridge by covering it with plastic wrap so that it touches the top of the filling (to prevent air from getting in). The whipped topping can be made in advance and stored in the fridge until it’s time to top the pie.
