Ingredients Needed:

  • Flour
  • Cornstarch
  • Butter
  • Vanilla
  • Brown sugar
  • Unsweetened cocoa powder
  • Chocolate chips
  • Whipping cream

No Eggs? Nope! These cookies do not contain any eggs.

Brown Sugar: If desired, you can replace this with regular white sugar or coconut palm sugar.

Recipe Notes:

  • Don’t forget to make sure your butter is softened before using. Remove it from the fridge and let it sit at room temperature before using. If you are using frozen butter, let it sit out for several hours before using.
  • Make sure you let your cookies cool completely before adding the filling.
  • Keep any leftover cookies in a sealed container. There is no need to refrigerate them, unless it is hot/humid in your area.

Attention chocolate lovers! Your perfect cookie is here! Soft, chocolate cookies with a creamy, chocolate filling.

Prep Time 1 hour
Cook Time 10 minutes
Total Time 1 hour 10 minutes

Ingredients

  • 3/4 cup butter, softened
  • 1/4 cup brown sugar
  • 1 tsp vanilla
  • 1 cup flour
  • 3 TBSP cornstarch
  • 1/4 cup cocoa powder
  • powdered sugar, for dusting

FOR FILLING

  • 1 cup chocolate chips
  • 4 TBSP heavy cream

Instructions

  1. Preheat oven to 350 degrees.
  2. Mix butter, sugar and vanilla in bowl until well combined.
  3. Add flour, sugar, cocoa and cornstarch. Beat until combined.
  4. Spoon approx tablespoons dollops on a baking sheet. Flatten gently.
  5. Bake 10-12 minutes

FOR FILLING:

  1. Melt chocolate over low heat, then add in cream. Stir until combined. Let cool.
  2. Spread chocolate filling on backside of cooled cookie, then, top off with another cookie, making a sandwich.
  3. Make sure cookies & filling are completely cooled before frosting them. Dust tops of cooled cookies with powdered sugar before serving.

Erin, I don't have children left at home, but I have somehow managed to NOT have any time for the kitchen either! These cookies look so fun. I think I should make some for my two little grandsons and then take the rest to work. My grandsons will adore me and the nurses at work will curse me the whole time they are eating these. hahahaha...it's gonna be great!
