These snickerdoodle bars taste identical to the cookie.  The exact same.  The only difference is these take much less work and time. Works for me. 👍

Ingredients for Bars:

  • Butter
  • Egg
  • White sugar
  • Brown sugar
  • Flour + Salt
  • Cream of tartar
  • Ground cinnamon

Ingredients for Ice Cream:

  • Whipping cream
  • Sweetened condensed milk
  • Ground cinnamon

Brown Sugar: If desired, you can replace this with coconut palm sugar.

Cream of Tartar: This will give your bars that snickerdoodle tang. However, if you don’t have any on hand, feel free to omit.

How to Make Cinnamon Ice Cream:

  • Start by beating your whipping cream. Beat until firm peaks form. This should take you about 3-5 minutes. Don’t beat it too long..you will get butter!
  • Next, whisk the sweetened condensed milk and ground cinnamon in a separate bowl.
  • Take approx 1/4 cup of the whipped cream and mix it into the sweetened condensed milk. Don’t forget this step! This will lighten up the sweetened condensed milk and make it easier to mix with the remaining whipped cream.
  • Gently fold the remaining whipped cream into the sweetened condensed milk mixture. Go easy on this step! You don’t want to deflate the whipped cream. You also don’t want to over mix it.
  • Spread the mixture into a freezer safe container. Cover and freeze.

Ingredients

  • FOR BARS
  • 1/2 cup (1 stick) butter, melted
  • 1 egg
  • 1/2 cup white sugar
  • 1/3 cup brown sugar
  • 1 tsp vanilla
  • 1 cup flour
  • 1/4 tsp cream of tartar
  • TOPPING FOR BARS
  • 1/4 cup white sugar
  • 2 tsp ground cinnamon
  • FOR ICE CREAM:
  • 2 cups whipping cream
  • 1-14 oz can sweetened condensed milk
  • 1 tsp cinnamon

Instructions

    1. Preheat oven to 350 degrees. Grease an 8×8 baking dish.
    2. In a mixing bowl, add in egg, both sugars and vanilla. Then, add in melted butter.
    3. Gradually, add in flour and cream of tartar. Mix until just combined. Spread into prepared dish.
    4. In a small bowl, mix topping for bars. Sprinkle on top of batter. Bake bars 25-30 minutes or until knife inserted comes out clean


FOR ICE CREAM:

  1. With an electric mixer with a whisk attachment, mix whipping cream until firm peaks form.
  2. In a separate bowl, whisk together ground cinnamon and the sweetened condensed milk.
  3. Take approx 1/4 cup of the whipped cream and gently mixed it into the sweetened condensed milk. Then, fold the remaining whipped cream into the mixture.
  4. Spread into a freezer safe container ( it will need a lid)
  5. Cover and place in the freezer for at least 6 hours before serving.

Notes

  • Prep time/cooking time are for bars.
