With Thanksgiving upon us, this marks the end of “all things pumpkin on food blogs” season.

To celebrate, I have one last pumpkin recipe for you guys!

It’s a quick bread and it only requires two ingredients. Well, the batter requires just two ingredients. You will need a few other basic ingredients for the cinnamon streusel topping. But, don’t worry, it’s not much.

Those two ingredient for the batter? Dry cake mix and pumpkin puree.

Ingredients Needed for Streusel:

  • Butter
  • Brown sugar + ground cinnamon
  • Flour

I told you…not too much!

A few recipe notes:

  • To Make Streusel: Simply mix together ingredients until crumbly. Use a fork for this job, it works perfectly. Store any leftover streusel in the fridge.
  • I used a vanilla cake mix for this recipe, but, you can also use a white, yellow or spice cake mix.
  • Be sure to use pumpkin puree, not pumpkin pie mix.

Streusel Pumpkin Quick Bread- Soft pumpkin bread with a crunchy cinnamon topping. The bread only needs two ingredients and the streusel is the perfect way to complete this easy treat.

Ingredients

FOR BREAD:

  • 1- box cake mix : vanilla, white, yellow or spice 
  • 15 oz pumpkin puree 

FOR STREUSEL:

  • 1/2 cup butter, melted
  • 1/2 cup brown sugar
  • 1 tsp ground cinnamon 
  • 1 1/3 cup flour 

Instructions

  1. Preheat oven to 350 degrees. Grease a 9 inch loaf pan.
  2. In a bowl, mix together ingredient for streusel with a fork until crumbly. Set aside.
  3. In a mixing bowl, beat dry cake m ix with pumpkin puree until fully combined. Your batter will be thick. Spread into prepared pan and sprinkle top with streusel mixture. Bake for 40-45 minutes or until toothpick inserted comes out clean. Let bread cool in pan for 15-30 minutes before removing from pan. Then, cool completely on wire rack.

Many pumpkin recipes don't have enough pumpkin flavor. Since this doesn't have pumpkin pie spice, I'm wondering if it's "pumpkiny" (sorry). enough.

Hi Sam- It's plenty "pumkiny" for us :) But, if you wish to add the spice, it sure would add a bit more to it. Let me know how it works out for you..enjoy!
