
No Bake Oatmeal Caramel Pudding Cookies- – Grab a cold glass of milk! Sweet caramel cookies loaded with oatmeal and topped with chocolate chips, plus, no baking required.

Ingredients Needed:
- Sugar
- Butter
- Evaporated milk
- Instant caramel pudding mix
- Old fashion oats
- Mini chocolate chips
- Toffee baking bits

Recipe Notes:
- They should set in your refrigerator in about 30 minutes. But, if the weather is really hot or humid, let them sit for even longer.
- This recipe calls for old fashion oats. You could use quick oats, if needed, but, the consistency of your cookies may be different.
- After mixing the melted butter/sugar mixture with the oats/pudding, be sure to let it sit for about 10 minutes. The butter/sugar mixture is very hot (be careful!) and if you stir in the toffee bits too soon, they will melt.

No Bake Oatmeal Caramel Pudding Cookies

Sweet caramel and oatmeal cookies topped with mini chocolate chips!
Ingredients
- 2 cups sugar
- 3/4 cup butter
- 2/3 cup evaporated milk
- 2- 3.4 oz. package instant caramel pudding mix
- 3 1/2 cup old fashion oats
- 1/4 cup mini chocolate chips
- 1/2 cup chocolate toffee baking bits
Instructions
- Line a flat rimmed baking sheet with parchment paper.
- In a saucepan, melt butter, sugar and milk. Bring mixture to a boil, then, remove from heat.
- In a large mixing bowl, whisk together oats and pudding mix. Add in butter/sugar mixture and stir to coat.
- Let mixture sit and cool for 8-10 minutes. Then, stir in chocolate toffee bits.
- Drop dough by the tablespoon on parchment lined baking sheets. Then, sprinkle tops with mini chocolate chips.
- Refrigerate cookies for 30 minutes to 1 hour to set.
- Keep any leftovers in refrigerator.
