Happy April Friends-

We are back to blogging this week! The family and I took the whole week off last week and left town. It involved lots of driving, but, NO laptop for the entire week..no checking my Twitter feed, no pinning on Pinterest, no emails.

Honestly, it was pretty darn great. 👍

But, I did miss eating dinner at home (we ate way too much take out) and baking in my kitchen. 🍲 🍰

Ok,to start us back off, today, we have some extremely easy and extremely delicious mini muffins.

Loaded with bacon bits and sharp cheddar cheese, these Mini Cheddar and Bacon Muffins are a great side addition to your dinner or just for a snack.

Just a few simple ingredients and these yummy muffins are ready to go!

Yield: 24 mini muffins

Mini Cheddar and Bacon Muffins

Mini Cheddar and Bacon Mini Muffins from Table for Seven

These mini muffins are perfect for a snack or a side to your favorite dinner!

Prep Time 10 minutes
Cook Time 10 minutes
Total Time 20 minutes

Ingredients

  • 2 cups flour
  • 2 tsp baking powder
  • 1 cup extra-sharp shredded cheddar cheese, plus additional for topping
  • 1/4 cup butter
  • 1 cup milk
  • 1 egg
  • 1/2 tsp garlic powder
  • 1/2 cup real bacon bits, plus, additional for topping

Instructions

  1. Preheat oven to 400 degrees. Grease a 24 count mini muffin pan.
  2. In a bowl, mix together flour, baking powder, garlic powder, bacon bits and cheddar cheese.  Set aside.
  3. In a saucepan, melt butter and milk together. Remove from heat and let it cool to the touch. Whisk egg into milk/butter mixture.
  4. Gradually, add milk/butter/egg mixture into flour mixture. Mix until just combined.
  5. Spoon batter into prepared muffin pan. Sprinkle with desired amount of cheddar cheese and bacon bits.
  6. Bake 10-12 minutes or until toothpick inserted comes out clean.

Do these need to be refrigerated if made ahead of tine?
