Stick with your New Year’s resolution and have a cupcake! Delicious, easy and makes just two!
I always find this post to be a tough one. Why, you ask?
Well, because this is the time of year when everyone is getting healthy and cutting back on sweets. Honestly, I don’t. OK, let me explain..I do eat much less than what I do over the holidays. But, I don’t really diet. I’ve tried. The strict discipline that is needed seems to vanish about a day or so after the diet starts.
I try and be conscience of what I eat and practice portion control. Instead of eating five cookies, eat one. Sounds kinda like a simple idea, but, believe me, it can be a little work. Especially, when you take picture of food for a living. 😉
So, instead of starting the new year with a healthy recipe, we are having cupcakes today!
The twist is..we are only making two.
These cupcakes are really simple and quite delicious. They are perfect when you have a hankering for cupcakes, but, don’t want to make a whole dozen or so. Portion control at its best.
My two cupcakes were frosted with a simple chocolate buttercream frosting, however, you can dress them up or down as you wish. Having just two makes decorating them easy.

Enjoy a cupcake-
- 1/4 cup flour
- 1 egg white
- 2 TBSP sugar
- 1/4 tsp baking powder
- 1 1/2 TBSP milk
- 1 tsp vanilla
- dash of salt
