Ingredients Needed:

  • Flour
  • Baking powder + Baking soda
  • Salt + Ground cinnamon
  • Maple syrup
  • Eggs
  • Vanilla
  • Butter
  • Powdered sugar
  • Milk

Maple Syrup: While I do recommend using pure maple syrup for this, I know it can be costly. Feel free to replace with imitation maple syrup or make your own.

How to Make:

  • First, make your batter. Be sure not to over mix. You simply don’t want any dry spots left in the batter.
  • Then, in a separate bowl and with a pastry butter or two knives, cut cold butter into a tablespoon of cinnamon. Stir that into the batter.
  • Spread batter into prepared pan and bake.
  • Let the bread cool for about 15-20 minutes, then, remove from pan.
  • Wait another 15-20 minutes and top with icing.
  • Let the icing set before serving, for best results.

Storage: Keep any leftover quick bread in a sealed container. It does not need to be refrigerated, but, it’s best to eat it within 2-3 days. You can also freezer this bread. It will stay good in a covered, freezer safe container/storage bag for a couple of months.

Ingredients

  • 2 1/4 cups flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp ground cinnamon
  • 1/4 tsp salt
  • 1 cup maple syrup, store bought or homemade
  • 1 cup buttermilk
  • 2 eggs
  • 1 tsp vanilla
  • 1/4 cup butter, melted

FOR SWIRL:

  • 1/4 cup butter, cold, cut into pieces
  • 1 TBSP ground cinnamon

FOR GLAZE:

  • 1 cup powdered sugar
  • 1/4 cup milk
  • 1 tsp vanilla

Instructions

  1. Preheat oven to 350 degrees. Grease a 9 inch loaf pan.
  2. In a bowl, whisk together flour, baking powder, baking soda, ground cinnamon and salt. Set aside.
  3. In a mixing bowl, whisk together butter, syrup, vanilla, eggs and buttermilk. Whisk until smooth and fully combined.
  4. Add flour mixture into butter/syrup mixture and whisk until fully combined.
  5. FOR SWIRL: In a small bowl, cut 1/4 cup cold butter into 1 TBSP of cinnamon until small pieces are formed.
  6. Fold into batter. Spread batter into prepared pan.
  7. Bake 40-45 minutes or until toothpick inserted comes out clean.

FOR ICING:

  1. Whisk together powdered sugar, milk and vanilla until smooth.
  2. Pour/drizzle over cooled bread.
  3. For best results, let icing set before serving.
