    Peanut Butter Doggie Cupcakes

    Our little puppy, Hope, turned 6 months old a few weeks ago. It’s hard to believe that when we adopted her, she was just 9 weeks old. Time sure has flown by.

    This is her,back in the fall. Don’t let the sweet puppy-dog face fool you. Trouble is her middle name.

    She is my official “assistant” when, taking photos. Along, with of course, my youngest son. They make quite a team. Lots of fun with these two,but, whew..some days! They have sooo much energy. So much. So.Much. Guys, they just wear me out.  Good thing I love them 🙂

    To celebrate her and all my lovable doggies, the kids and I decided to make doggie cupcakes or “pup cakes”.  A dog friendly dessert made with whole wheat flour and applesauce. It’s also topped off with some frosting made with pumpkin and yogurt. Nice and doggie friendly.
    Not a surprise, they were an instant hit with all of my doggies. Hope could not contain herself. Typical puppy craziness:

    The other two dogs were a bit more behaved. Trixie, waited so patiently. Such polar opposite of the the puppy:

    They were lots of fun and a great treat for our furry friends.

    {side note: you may want to adjust the portion size to the size of your dog. My bigger dogs could eat a whole cupcake, but, the puppy (aside from the one she grabbed from the photo table), was only served half at each time. Use your own judgment when serving}

    Ingredients (6-8 cupcakes)

      for cupcakes

      • 1/2 cup wheat flour
      • 1 tsp baking powder
      • 1/3 cup canola oil
      • 1/2 cup unsweetened applesauce
      • 1/2 cup plain Greek yogurt
      • 1 TBSP honey
      • 2 TBSP creamy peanut butter

      for frosting

      • 2 oz cream cheese, softened
      • 4 TBSP pureed pumpkin
      • 2 TBSP plain Greek yogurt
      • 2 TBSP flour
      Preheat oven to 350 degrees. Grease a 6 count muffin pan or line with liners
      In a mixing bowl, combine all ingredients for cakes until smooth.
      Spoon evenly into muffin pan.
      Bake for 30 minutes or until knife inserted comes out clean.

      for frosting

      Mix ingredients until smooth. Frost on cooled cakes.
