Let’s have pie today. Pie with the best summer flavor: LEMON Yum.
I do love lemon, do you? Would you call yourself a lemon person? I so am. My husband is not.He’s a tad allergic. Breaks out in hives. That’s a bummer for him, cause, this pie is totally awesome.

It’s a nice, refreshing pie that will go perfect with your summer parties and only needs 4 ingredients! (unless, you want to make your crust homemade.)
It does require a small amount of baking, but, it’s just 15 minutes. Not too terribly long to light your oven.
But, if you do it the evening before you want to serve it, then, stick in your fridge for the night, it’s not going to heat up your kitchen for the entire day and be ready to go the next morning.
Serve this refreshing Lemon Pie with a nice doll up of whipped cream and you are good to go!

Lemon Pie

Perfect for spring and summer! Lemon Pie that requires just 4 ingredients.
Ingredients
- 1-9 in graham cracker crust (store bought or homemade)
- 14 oz can of sweetened condensed milk
- 1/2 cup fresh lemon juice
- 2 egg yolks
Instructions
- Preheat oven to 350 degrees.
- In a mixing bowl, add egg yolks, lemon juice and condensed milk. Beat until mixture is thick and smooth. This should take about 5 minutes. Pour batter into crust.
- Bake for 15-18 minutes or until set.
- Remove from oven and let pie cool.
- Then, refrigerate for at least an hour before serving.
Notes
- Prep time includes time in fridge before serving.

If you make the crust, do you pre bake it or just refrigerate? This looks delish. Can’t wait to make it :)

Hi Blue! I think refrigerating it for about an hour ( or 30 minutes in the freezer ) should be fine. It's really good..hope you like it :)
