We are going back in time again today. Way back in 2012, this recipe was originally shared here on the blog.  It continues to be a regular staple on our dinner menu, so, it’s only fitting to share it again, with just a few minor adjustments,

It’s creamy baked mac n cheese with some chicken tossed in and topped with bread crumbs to give you a bit of crunch.  It’s so simple to put together and tastes delicious.

Add it to your dinner rotation soon..you will not be disappointed.

Baked Mac n Cheese with Chicken

Baked Mac n Cheese with Chicken from Table for Seven

Creamy macaroni and cheese packed with chicken and topped with  crunchy breadcrumbs.

Cook Time 30 minutes
Total Time 1 hour 10 minutes

Ingredients

  • 1 lb boneless chicken breast, cut into 1 in pieces
  • 1 TBSP canola oil
  • 2 cups dry elbow macaroni
  • 3 TBSP butter
  • 3 TBSP flour
  • 2 cups milk
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • salt/pepper, to taste preference
  • 1/2 tsp poultry seasoning
  • 2 cups shredded cheddar cheese
  • 1/4 cup cream cheese

FOR TOPPING:

  • 2 TBSP butter, melted
  • 1/2 cup bread crumbs
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat a skillet with canola oil. Add in chicken pieces. Season with salt, pepper and poultry seasoning.Cook pieces until they are no longer pink. Set chicken aside.
  2. Preheat oven to 350 degrees. Grease a 9 x 13 baking dish.
  3. Cook pasta according to box directions. Set aside.
  4. In a saucepan, over medium heat, melt butter. Add in flour and cook for 1-2 minutes. Add in onion powder and garlic powder.
  5. Slowly stir in milk. Increase milk to light bubble. Reduce and cook for 8-10 minutes until mixture thickens, stirring often.
  6. Stir in cheeses until melted. Mix cheese sauce with cooked elbow macaroni and coat well. Stir in cooked chicken pieces.
  7. Pour into prepared pan.
  8. Prepare topping by mixing ingredients in small bowl. Sprinkle on top of macaroni.
  9. Bake uncovered for 25-30 minutes or until bubbly.
