    Since we finished last week with cinnamon rolls, it’s only fitting to start this week with cake. Right?! Of course, it’s gotta be chocolate and involved candy.  It’s the only way.

    Not only is today, let’s start the week with chocolate cake, it’s Secret Recipe Club reveal day.  I really love being in this wonderful group of bloggers.  Not only does it get bloggers meeting bloggers, it’s so much fun to check out what everyone else is cooking up in their kitchen.

    My assignment this week is Hapa-tite!  Nicole not only cooks and bakes up some amazing dishes, she does tutorials, reviews books and restaurants.  A little bit of everything from a multi-cultural girl!

    A few things that caught my eye:  Baked Onion Rings, Pumpkin Spice Hot Chocolate Mix and Banana Pudding Cupcakes.   As with previous months, it was tough figuring out what to chose.  So, I called in reinforcements: my daughter.  

    She chose the Rolo Cupcakes ( yep, apple does not fall from the tree folks).
    I did cheat a bit on this one though.  Instead of cupcakes, we made a cake and..I used a cake mix as the base. Ah! I know..terrible.  But, I stuck with the graham cracker base, cream cheese frosting and of course, the Rolo’s (they make it pretty darn special).


    Chocolate Rolo® Cake

    Prep Time:  15 minutes
    Baking Time: 30 minutes
    • for base:
    • 1 1/2 cup graham cracker crumbs
    • 1 stick (1/2 cup) butter, melted
    • for cake:
    • 1 box devil’s food cake mix
    • 1/3 cup water
    • 2 eggs
    • 1 stick (1/2 cup) butter, melted
    • 1/2 cup Rolo® candies, chopped
    • cream cheese frosting, canned or homemade,
    • caramel sauce, jarred or homemade
    1. Preheat oven to 350 degrees.  Grease 9×13 baking dish.
    2. In a mixing bowl, combine graham cracker crumbs and melted butter.  Mix well and press well on the bottom of of baking dish.
    3. In a separate bowl, combine dry cake mix, water, eggs, and butter.  Mix well until combined.
    4. Fold in candies.
    5. Pour batter on top of graham cracker crust.
    6. Bake 30 minutes or until knife inserted comes out clean.
    7. Let cake cool completely before frosting.  
    8. Drizzle with caramel sauce and additional candy, if desired.
