Hello everyone! How was your holiday?

I hope it was filled with everything perfectly Christmas. It’s been a seriously, lovely, fabulous week here are our house. Christmas was beautiful.  We ate too much food, took the kids to see Frozen and had ourselves a white Christmas.   Yep, an actual white Christmas..lots of snow in the evening. We even sat by the fire and had hot cocoa!  We loved every minute of it 🙂

Along with our snow, our temps have been all over the place!

Yesterday, it was 40, tomorrow it’s going to be 2.  🤷

Today, lots of wind. Perfect soup weather.  This soup was so hearty, filling and packed full with cheesy, noodily, goodness.

This Cheesy Lasagna Soup is delicious and even better the next day warmed up for leftovers. Serve it with a side of nice, crusty, bread and it’s a perfect winter dinner.

Cheesy Lasagna Soup

Soups on! A hearty soup filled with lasagna noodles and lots of cheese. Serve it with a side of your favorite garlic bread for a great cold-weather dinner.

Prep Time 35 minutes
Cook Time 50 minutes
Total Time 1 hour 25 minutes

Ingredients

  • 1 lb ground turkey (or beef)
  • 1 tsp minced garlic
  • 1 TBSP dry minced onion
  • 28 oz can of whole tomatoes, drained, plus, pureed to desired texture in your blender
  • 2 TBSP brown sugar
  • 2 tsp dry Italian season
  • 14 oz can tomato sauce
  • 3 cups chicken broth
  • 1 cup grated Parmesan cheese
  • 2 1/2 cup dry lasagna noodles, broken into pieces
  • salt/pepper, to taste preference
  • shredded mozzarella cheese, for garnish

Instructions

  1. In a large pot, brown ground turkey with garlic and onion. Continue until no longer pink. Drain if necessary.
  2. Return meat to pot. Add in tomatoes, tomato sauce, chicken broth, brown sugar, Italian seasoning and salt/pepper.  Stir to combine a bit.
  3. Bring mixture to a boil, then, reduce heat to medium and let simmer for 15 minutes.
  4. Add in lasagna noodles. Cook until tender ( approx 10-15 more minutes)
  5. Stir in Parmesan cheese.
  6. If desired, garnish with shredded mozzarella cheese when serving.

Erin, I just made the cheesy lasagna soup and it tastes delicious. I will be serving tomorrow evening to two relatives. I have a question. Mine turned out more like a casserole than a soup. I followed directions exactly. Can you tell me how to make it "soupy" while keeping the wonderful taste? Thanks so much!

Hi Judy- It is a thicker-texture soup, but, if you want to thin it out a bit, add a little more chicken broth or add a few less noodles. Hope that helps and thanks for the feedback.
