With summer in full swing, it’s been a little tough to participate, but, this week, we are good to go. This week’s theme is Breakfast for Dinner and our lovely host is Connie at The Foodie Army Wife.
We are HUGE for eating breakfast for dinner.
It’s nearly the only thing we can have for dinner that every single person loves. It’s just so awesome. If we lived on pancakes, waffles and french toast, feeding time would possibly be a wee bit less of a headache at times. 😉
For my dish, we are having baked french toast. It is a bit similar to this and this from our recipe collection, it’s also, a smidge different.
Baked Berry French Toast is packed with fresh berries and is very creamy. Plus, it’s fruity and topped with a bit of cinnamon sugar.

Baked Berry French Toast

A great breakfast or brunch for berry season! French toast baked in the oven and topped with fresh berries. Too good to pass up!
Ingredients
- 6 slices french bread, cubed
- 1 cup mixed berries of your choice
- 4 oz cream cheese, cubed
- 6 eggs
- 1 cup whole milk or cream
- 1/4 cup maple syrup
- cinnamon sugar, for sprinkling, optional
Instructions
- Preheat oven to 350 degrees. Grease and 8 in baking dish.
- Place 1/2 bread cubes on the bottom of the dish. Sprinkle with cream cheese cubes. Then, sprinkle berries. Cover with remaining half of bread cubes.
- In a mixing bowl, whisk eggs, milk and maple syrup until blended.
- Pour over top of bread cubes. Sprinkle with cinnamon sugar if desired.
- Cover and bake for 30 minutes. Uncover and bake an additional 30 minutes.
- Let it cool at room temperature for approx 10 minutes before serving.
