    Let’s be honest.  It’s tough getting back into your routine after the holidays, right?  Getting up on a schedule, getting kids back to school, back to work, eating better..yada yada yada.  It’s hit me too.  My brain is still on winter break.  Yesterday, I watched the first and last episode of Felicity on Netflix. Didn’t really grab me, but, I wanted to see how the show ended. That is how much is getting done at my house this week. I have a ton of great ideas for the blog, recipes, stuff to get done around the house.  But, no..just me, my youngest and Netflix.  
    Ah! Here’s hoping that my brain catches up soon.
    OK..enough about my laziness.  Let’s talk meatloaf.  We eat meatloaf a ton.  So, finding some new way to cook it, makes me a little happy.  These mini meatloaves are so tasty. The size is perfect for the kids and the BBQ sauce and stuffing mix make a great combination. 
    And the bacon..well…it’s bacon. Nothing more to say.   A new favorite at our house.
    { A side note..double this recipe and put some in your freezer.  When ready, pop them in the oven for a quick dinner!}
    Mini Bacon-Cheese Turkey Meatloaves

    Ingredients (Serves: 6)
    • 1 1/2 lb ground turkey
    • 2 eggs
    • 3/4 cup milk
    • 1-6 oz package stuffing mix {ex: Stove-Top}
    • 3/4 cup shredded cheddar cheese
    • 1/3 cup BBQ sauce
    • 6 slices turkey bacon
    Preheat oven to 375 degrees. Spray a baking sheet with non stick cooking spray.
    In a large bowl, whisk egg and milk.
    Add all remaining ingredients except bacon. Mix until well combined. Shape meat into 6-individual portions.
    Wrap a slice of bacon around each portion. Bake 45-50 minutes or until done.
