    Mashed potatoes is not something we eat alot of around here. My kids are not big fans of them. Weird, right? I thought all kids loved mashed potatoes.  Of course, nothing is the norm when it comes to my children’s eating habits.  
    This was a bigger hit than our regular, plain mashed potatoes though.  I will say it again..bacon and cheese, makes everything a bit better. 
    This casserole is very creamy, cheesy and would make a great side dish or you could serve as your main course.  You could also put it together, cover it and put in the fridge.  
    Then, when you are ready, uncover and bake. It’s a great dish to have for a holiday or to bring to a potluck.
    Mashed Potato Casserole

    Ingredients (Serves: 6)
    • 8 medium potatoes (approx 2 lbs, peeled and cubed)
    • 1 cup evaporated milk
    • 1/4 Parmesan cheese
    • 2 cups shredded cheddar cheese, divided
    • 1/2 cup sour cream
    • 4-6 slices of bacon, cooked and crumbled ( or about 1/2 cup of bacon bits will work too)
    • salt/pepper, to taste preference
    • 1/2 tsp garlic powder
    Preheat oven to 350 degrees. Spray/grease a 8-9 in baking dish.
    Boil potatoes in large pot until tender. About 20-30 minutes. Drain well.
    Return potatoes to pot. Add milk, sour cream, salt, pepper, and garlic powder. Beat/mash well until smooth and creamy.
    Fold in 1 cup of cheddar cheese.
    Spread evenly into prepared dish and bake for 20 minutes.
    Remove from oven. Top with bacon and remaining 1 cup of cheddar cheese.
    Return to oven and bake until cheese is melted.
