A few recipe notes:

  • If you don’t have a food processor, a pastry cutter can be used to mix the crust ingredients.
  • Be sure that your butter is nice and cold..this helps mixing your crust easier.
  • Don’t forget to chill the bars before serving! This will firm them up.

Pucker Up! Sweet lemon bars with a powdered sugar top. Perfect for the season!

Prep Time 1 hour 30 minutes
Cook Time 45 minutes
Total Time 2 hours 15 minutes

Ingredients

  • FOR CRUST
  • 1 cup (2 sticks) butter, cold
  • 2 cups flour
  • 1/2 cup powdered sugar
  • FOR FILLING
  • 6 TBSP all purpose flour
  • 2 cup sugar
  • 4 eggs
  • 6 TBSP lemon juice
  • 2 tsp grated lemon zest

Instructions

FOR CRUST

  1. Preheat oven to 350 degrees. Spray 9 x 13 in baking dish with non stick cooking spray.
  2. Mix butter, flour and powder sugar in a food processor until crumbly.
  3. Press crust on to the bottom of the prepared baking dish. Bake for 20 minutes. Let it cool completely.

FOR FILLING

  1. Mix flour, eggs, lemon juice and lemon rind until smooth. Spread on cooled crust. Bake another 25 minutes.
  2. Let cool, then, sprinkle with powder sugar.
  3. Refrigerate for about 1-2 hours to chill before serving.

Tried to make these...they didn't turn out. Maybe you are forgetting sugar in the filling? It is like eating lemon flavored hard cooked eggs!
